I’ve kind of taken the snickerdoodle to the next level.
But first, let me give you the quick low down of what snickerdoodle cookies are.
What makes snickerdoodles a little different than sugar cookies, is cream of tartar. It makes the cookie a little more chewier. But, it also entices the flavor of the cookie a bit.
Speaking of enticing…
This snickerdoodle cookie dough isn’t just rolled up in your usual cinnamon and sugar, it’s encircled with chai flavored sugar.
It is the most aromatic cookie you’ll ever meet… err EAT!
One chai flavored snickerdoodle was just not enough for me.
I needed to sandwich two of them between chai flavored cream cheese frosting!
That’s where the whoopie pies come in to play.
These Chai Snickerdoodle Whoopie Pies will melt in your mouth and make your eyes roll!
The balanced flavor of the chai sugary spices with the textures of the chewy cookie, and the creamy filling is seriously mind blowing!
I may have tried to contain myself from the cookie dough… the baked cookies… and the frosting.
But, I have a sugar weakness.
So, obviously I couldn’t stop from the just-one-more-bite method.

These chai flavored cookies are so fun to make and are a breeze to put together.
I know you’ll enjoy them as much as I do!
- 10 tablespoons unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup heaping packed light brown sugar
- 2 tablespoons chai flavored sugar (or use 1 teaspoon cinnamon to substitute.)
- 1 large egg, plus 1 egg yolk
- 1/2 cup (5.3 ounce container) vanilla Greek yogurt (I love to use Tillamook.)
- 2 teaspoons vanilla extract
- 2 1/4 cup all purpose flour
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon cream of tartar
- pinch of salt
- 1/4 cup chai flavored sugar for rolling cookie dough in (or use cinnamon & sugar mixture to substitute.)
- 6 ounces softened cream cheese
- 3 1/4 to 3 1/2 cups of powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons heavy cream
- 2 teaspoons chai flavored sugar (or use 1/4 teaspoon cinnamon to substitute.)
- Beat the butter, sugar, brown sugar, and chai sugar for about 1 minutes on low speed.
- Scrape down the sides of the bowl. Mix in the yogurt, vanilla, egg, and egg yolk until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, cream of tartar, and salt. Add slowly into the wet mixture until you no longer see the flour mixture. Do not over mix.
- Refrigerate for at least one hour.
- Preheat oven to 350 degrees.
- Put 1/4 cup of chai flavored sugar into a medium bowl and set aside.
- Using a medium cookie scoop, scoop and shape each cookie into a round ball. Roll and shape between your palms. Roll the dough around in the bowl of chai flavored sugar until all coated. Place on a covered (parchment paper or silicone baking mat) baking sheet about 2 inches apart.
- Bake for about 10-12 minutes. Completely cool ON the baking sheet. (As the baking sheet cools, so does the cookies. Therefor your cookies will not be over cooked.) The cookies may seem to be under cooked when taken out of oven, but allowing the cookies to rest on the hot baking sheet while cooling makes them soft and chewy.
- In a large mixing bowl, cream together the cream cheese, chai sugar, and vanilla extract. Add powdered sugar one cup at a time while mixing. Pour in heavy cream for a medium to thick consistency.
- When cookies are completely cooled, fill the cookies with the cream cheese filling. You may fill a small plastic bag with the filling and snip one corner at the bottom. Pipe out the filling onto one bottom side of a cookie and top with another. Enjoy!
- Cookie dough may be refrigerated for up to 3 days. Cookies stay fresh for up to 4 days at room temperature. Filled cookies need to be refrigerated and will stay fresh for up to 4 days. Serve at room temperature.
- Makes about 32 medium size cookies and 16 whoopie pies (sandwich cookies).
