Buffalo Chicken Potato Skins

Perfect party food or with your favorite sandwich! This recipe makes 12 individual servings and may easily be doubled. Prep time is all depended upon if your chicken breast is cooked ahead of time or not. Total cook time is 55 minutes.
Ingredients
  • 6 russet potatoes (small to medium size)
  • 1-2 tablespoons butter
  • 4 ounces cream cheese
  • 1 chicken breast, cooked and cut into small bite size pieces.
  • buffalo (wing) sauce to drizzle
  • 1 cup of your favorite shredded cheese (I used pepper jack cheese)
  • seasoning mixture:
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 2 tablespoons KOSHER salt
  • pepper, to your liking
Instructions
  1. Preheat oven to 400 degrees.
  2. Mix all of the seasonings together in one large bowl, set aside.
  3. Wash, scrub and dry all of the potatoes. (Trim any bad parts.)
  4. Puncture each potato a few times with a sharp knife. This allows the heat to cook them evenly.
  5. Rub butter all over each potato.
  6. Roll each potato into the seasoning mix until all covered.
  7. Set potatoes on a baking sheet about 2 inches apart from each other.
  8. Bake for 45 minutes.
  9. When finished cooking, slice each potato in half.
  10. Scoop out the middles with a spoon.
  11. Divide the cream cheese evenly between all the scooped out potatoes.
  12. Add the cooked chicken.
  13. Drizzle on the buffalo (wing) sauce.
  14. Sprinkle on your favorite shredded cheese.
  15. Place back into the heated oven for another 10 minutes or until the cheese is melted.
  16. Take out of oven and drizzle with even MORE buffalo sauce.
  17. Serve warm and enjoy!
