Jalapeno Bratwurst Poppers

Bratwurst sitting in a creamy and cheesy filling, all nestled on top of a spicy jalapeno… all wrapped up in bacon! Serves 6.
Ingredients
  • 3 large jalapenos
  • 6 bratwurst, flavor of your choice (I used Habanero.)
  • 1/2 cup grated cheese (I love to use pepper jack cheese.)
  • 4 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 pound bacon (Depends on how thick and thin the bacon is. You may not need the full pound.)
Instructions
  1. Boil bräts in water or beer for 8 minutes.
  2. Preheat oven to 400 degrees.
  3. Slice jalapenos into halves.
  4. Combine the cream cheese, sour cream, mayonnaise, and grated cheese in a medium mixing bowl.
  5. Fill each jalapeno with the creamy mixture and top with the (precooked) bräts.
  6. Wrap the bacon around the whole brät and jalapeno creation while just tucking the ends under the jalapeno. Set onto a baking pan.
  7. Bake for 20 to 25 minutes. Or until the bacon is golden and crispy.
Notes
*Use a spoon to scrape out all of the seeds (and membranes) to decrease the amount of burn(!) on your hands. Or just use latex gloves. *If using thick bacon, fry it a little bit. By doing this, it will cook evenly with the already precooked brät. If the bacon is thin, it will cook just fine in the oven and there is no need to precook it.
