We often call our kitchen the 24 Hour Cafe.  It’s exactly that.  Bedtime snacks (which usually turns into a meal), 2 a.m. snack attacks (that’s the hubster!)… I could go on forever.  But how else would it be with a house full of hungry guys?!  

For lunch, my 3rd grader really looks forward to having a little mid-break from school– every single day.  This works for both of us.  This way, I know East’s filling his hungry belly.  It just doesn’t happen when he’s in the chaotic lunch room.  You wouldn’t believe how many children I’ve witnessed get a tray full of food, sit down for 2 minutes, and get up to throw it all away.  Might as well just ask your child to dump the lunch money in the trash, too.  Besides, it just makes me feel good in this little mommy world of mine, that I can provide him a hot healthy lunch from the peace and quiet of our home. 

Throwing down the healthy, in and around the sneaky route, though.

Ham and cheese.  All in one little pocket of goodness.

And in goodness, I mean– healthy kind of goodness!

These Parmesan Crusted Ham and Cheese Pockets have a tender dough surrounding melted cheese and chopped pieces of ham.  The homemade dough has just the right amount of ground flaxseed mixed in with the whole wheat flour… no one will notice the sneakiness.  The texture of the dough mingles with the cornmeal baked on the bottom and the Parmesan on top.

It takes less than 15 minutes to prepare the dough.  (Full directions are in the recipe further below.)

While you let the dough rest for a few minutes, get your grated cheese and chopped ham ready to go.  The dough starts rising as you’re working with it.  So, no need to let these babies sit to rise… they do that in the hot oven!

Divide the ball of dough into 4 pieces.

Gently pull each ball of dough into an oblong shape with both your hands.  Lay onto a clean surface and fill one half with the ham and cheese.  Be sure to leave space around the edges.

Have a baking sheet ready with cornmeal sprinkled on it.  This prevents the pockets from sticking to the pan AND just tastes really amazing!

When transferring the filled and sealed pockets from the clean surface to the baking sheet, use a dough scraper or a flat spatula.  Gently lay the filled pockets on the cornmeal covered baking sheet.  Brush the amazing garlic butter on the tops and along the sides.

Bake and eat!  

By the way, these freeze very well after baking!

Serves 4
These Parmesan Crusted Ham and Cheese Pockets have a tender dough surrounding melted cheese and chopped pieces of ham. The homemade dough has just the right amount of ground flaxseed mixed in with the whole wheat flour. The texture of the dough mingles with the cornmeal baked on the bottom and the Parmesan on top.

Ingredients
  1. 2 1/4 teaspoons active dry yeast
  2. 2 teaspoons granulated sugar
  3. 1/2 cup very warm water, 110 degrees
  4. 1 tablespoon honey
  5. 1 egg, beaten
  6. 1/4 cup milk (which ever you prefer)
  7. 2 tablespoons butter, room temperature
  8. 3/4 to 1 cup white bread flour
  9. 3/4 cup whole wheat flour
  10. 1/2 teaspoon salt
  11. 2 tablespoons ground flaxseed
  12. 1/2 pound ham, sliced and chopped
  13. 1 1/2 cups shredded cheese
  14. 2 tablespoons cornmeal
  15. 2 tablespoons butter, melted
  16. 1 tablespoon garlic powder
  17. 1 cup grated Parmesan
Instructions
  1. Put yeast and sugar in a small bowl, add the warm water and stir. Set aside for 10 minutes to bubble up and proof.
  2. Heat the milk (warm to the touch) with 2 tablespoons of butter, until melted. Set aside.
  3. Put bread flour, whole wheat flour, flaxseed, and salt into a large mixing bowl.
  4. Stir and dissolve the honey into the proofed yeast. (It will deflate a little and that is okay.)
  5. Add the proofed yeast with honey, milk and butter mixture, and beaten egg into the flour mixture. Mix by hand or with a dough hook on low speed. Keep mixing until the dough has pulled away from the sides of the bowl. (About 5 minutes.) Add additional flour one tablespoon at a time, if needed.
  6. Preheat oven to 350 degrees.
  7. Take dough out of the bowl and set onto a clean surface. Do not flour the surface. Allow to rest on surface with the empty bowl setting on to cover the dough for 5 minutes. (This allows elasticity in the dough for stretching.)
  8. Cut the dough into quarters, making 4 pieces of dough.
  9. When flattening each ball of dough, simply hold it between your hands and work it out with your fingers in an oblong motion. Your dough may end up in an oblong or a rectangle.
  10. Fill one half of each flattened piece of dough with the ham and cheese. Be sure to leave enough room near the edges to fold and pinch them together.
  11. *Pinch and fold together the edges closed. Use a dough scraper or a flat spatula to lift up the filled dough.
  12. Sprinkle cornmeal on a covered baking sheet.
  13. Put each pocket onto the baking sheet, 1/2 inch to an inch apart.
  14. Add the garlic powder to 2 tablespoons of melted butter.
  15. Brush melted garlic butter on the tops of dough and sprinkle grated Parmesan cheese on the top.
  16. Bake in a preheated 350 degree oven for 25 to 30 minutes. Or until golden brown on the tops.
Notes
  1. *How to pinch and seal the ends of the dough together: Press the top piece of dough with your left finger and pull up the bottom piece of dough with your right hand to fold up and over.
  2. For freezing, wrap individually after baked and completely cooled.
  3. Recipe may easily be doubled for more cheesy pockets to go around!

Depending on where you live and how you were raised, you’re probably very particular how you like your mashed potatoes.  I definitely am!  

Growing up in Idaho, where there were just as many potato farms as there were dairy farms, I think I can safely say I know my way around a few potatoes.  Although growing up, we always had mashed potatoes from a can… in powdered form.  Have no clue why our massive potato cellar was even FULL of those large Idaho potatoes.  Maybe for a cold day when the 10 gallon can of potato powder ran low?!?   

In my little world of potato land, I’m a huge fan of Red and Yukon Gold potatoes.  Put them together and it makes an amazing texture for mashed potatoes.  Put them in a slow cooker and you have super, SUPER creamy Slow Cooker Garlic Buttermilk Mashed Potatoes!

The best thing about these mashed potatoes… besides how they are just absolutely mind blowing, is that they are cooked in the slow cooker.  You can go about your day and come back hours later to whip them up.  

There’s also another best thing about the potato action being in the slow cooker.  AFTER you whip them, they can sit in there to stay warm until you’re ready for them!

I like to leave the trimmed skins on the potatoes.  One huge reason being, I peeled waaaayyyy too many Idaho potatoes as a child.  And… I’m just too impatient to peel them all.  Besides, it gives it a much better texture.

Put the trimmed and cut potatoes in your crock pot.  Along with a bushel of green onions and a whole bulb of crushed garlic.  

Place the lid on and set it to HIGH or LOW– depending upon what you’ve got planned that day.

The creaminess is already taking place!  Notice how buttery yellow the Yukon Golds are?

To test when the potatoes are just right, poke a fork in one potato to see if it is soft.  When the potatoes are tender , it’s time to put in the cream cheese and grated Parmesan cheese.  

For the last step, drizzle in the buttermilk as you use your favorite potato masher of some sort.  I like to plug in the handy hand held mixer and mash with the beaters.  

Once you see that you’ve hit all of the potatoes in the pot, get it to the consistency you prefer.  I like a little rougher texture with my mashed potatoes.  If you like it to the max creamy, pour a little bit more buttermilk in when mashing.

Ingredients
  1. 2 pounds Red potatoes
  2. 2 pounds Yukon Gold potatoes
  3. 1 bushel green onions, chopped
  4. 1 bulb garlic (all the cloves!), crushed
  5. 8 ounces cream cheese
  6. 1 cup grated Parmesan
  7. 3/4 cup buttermilk (may use less or more depending preferred consistency)
  8. 6 tablespoons butter
  9. salt and pepper, to taste
  10. parsley, optional for garnish
Instructions
  1. Scrub the potatoes under cold water and trim any bad parts away from the skins. Cut each potato into half.
  2. Put cut and trimmed potatoes in the slow cooker first with chopped green onions and crushed garlic on top. *Place on the lid and set the temperature on LOW for 6 hours or on HIGH for 4 hours.
  3. Put cream cheese and grated Parmesan on the cooked potatoes, still in the slow cooker. While mashing with a hand mixer or potato masher, slowly add the buttermilk. Continue to mash until the preferred consistency. Top creamy potatoes with dabs (tablespoons) of butter and garnish with parsley.
  4. Serve immediately. Or leave on LOW or WARM temperature in the slow cooker until ready to serve. Store in the refrigerator for up to 4 days.
Notes
  1. *If you want less cooking time, cut potatoes smaller. For more cooking time, leave the potatoes whole.

I think I have a bit of an obsession with pasta. 

I’m in love with the taste of pasta… the texture of different pasta…  but mainly the shape of pasta.

I could spend a whole lotta time in the pasta isle.  Especially in the expensive specialty pasta section.  Dreaming of all the different sauces that can be made to swim around the specific sauce bound pastas.

But let’s get to the pasta one pot meal I made for you!  Creamy Chicken Pasta Skillet is seriously a dish you are going to want to make on Pasta Night!  Don’t have a specific pasta night on your weekly menu??  Now’s the time to designate one!

How it works is, we each choose 3 (or more) ingredients from the given month’s ingredients list and create a recipe.  Colleen with The Smart Cookie Cook is our host this month.  She came up with this amazing list of ingredients:

White Chocolate

Eggnog
Canned biscuits
Nutmeg
Browned butter
Cherry tomatoes
Spinach
Roasted Garlic
Vanilla ice cream

Are you curious how I chose my three ingredients?

Not only am I obsessed with pasta, but with cheese.  And, Muenster cheese happens to be a staple in my kitchen.  I know it’s kind of hard to believe there’s green in one of my recipes.  But, I love how fresh spinach can add some depth to a dish.  And of course, cream cheese.  Another staple I cannot be without.

You are going to love how easy this one pot meal is… on Pasta Night, or Chicken Night… or Skillet Night!

In a heavy skillet, sauté chicken and sun-dried tomatoes for about 5 minutes.

Pour chicken broth straight onto the sautéd chicken and sun-dried tomatoes.  All the flavor on the bottom of the seared pan will go all through the dish!  Add your favorite dry pasta.  (I used Garganelli pasta.)  Stir and cover.  Allow it to simmer for 15 minutes, covered.

Lift the lid and add the chopped fresh spinach and cream cheese.  Put the lid back on for a few more minutes to melt the cream cheese.

Turn off the heat and stir the amazing~ness all together.

Now it’s time to add the Muenster cheese (or your favorite kind of cheese).  Oh, so cheesy~licious!

  2. 2 tablespoons butter
  3. 1 pound boneless chicken breasts, cut into 1 inch pieces.
  4. 1/2 teaspoon oregano
  5. 1/4 cup sun-dried tomatoes, chopped
  6. 2 1/2 cups chicken broth
  7. 2 1/2 cups dried pasta
  8. 2 cups fresh spinach, chopped
  9. 4 ounces cream cheese
  10. 1/4 pound Muenster cheese, or your favorite kind.
Instructions
  1. Preheat skillet on medium heat with olive oil and butter. Place chicken pieces and sun-dried tomatoes. Sprinkle on the oregano and sauté for 5 minutes.
  2. Pour in chicken broth and stir in dried pasta. With the heat still on medium heat, cover with lid for 15 minutes.
  3. Lift the lid and add chopped fresh spinach and pieces of cream cheese. Stir and put the lid back on for a few more minutes to melt the cream cheese.
  4. Turn off heat and add cheese. Cover with lid to melt cheese. Serve immediately.
Notes
  1. Makes 4-6 servings. May be easily doubled for a more hungry crowd!

If you were to ask me what my favorite dessert was to make, it’d be cinnamon rolls all the way.  But, fudge is also my favorite thing to whip up in the kitchen.  

Fudge is something that can be made on a whim.  There’s no oven to preheat.  And, it comes together fast!  

Creamy… decadent… smooth Cinnamon Roll Fudge.  Literally melts in your mouth!

Ingredients
  1. 2/3 cup evaporated milk (not sweetened condensed milk)
  2. 1 2/3 cup granulated sugar
  3. 1 teaspoon vanilla
  4. pinch of salt
  5. 1 1/2 cups mini marshmallows
  6. 1 1/2 cups white chocolate chips
  7. 1 cup cinnamon chips
Instructions
  1. Melt cinnamon chips in a heat safe bowl on top of a small pot of simmering (not boiling) water. Do not let the hot water touch the bowl. Take the bowl off when cinnamon chips are melted and set aside. (The melted cinnamon chips may have a thick consistency. But when it cools, it will become creamy.)
  2. Put marshmallows and white chocolate in a large mixing bowl, set aside.
  3. Bring milk, sugar, vanilla, and salt to boil over medium heat. Cook for 4 minutes, stir constantly. Remove from heat.
  4. Pour over marshmallows and white chocolate. Stir until all combined and the chocolate chips and marshmallows are melted.
  5. Pour 1/2 the fudge mixture into a lined 8 inch by 8 inch baking dish. Line the pan with parchment paper or aluminum foil, sprayed with cooking spray. (This makes it so you can lift straight out of the baking dish and cut.)
  6. Spoon small dollops of 1/2 of the melted cinnamon chips onto the bottom layer of fudge mixture. Continue with the rest of the fudge mixture and finish off with the rest of the melted cinnamon. Glide a knife all the way through the fudge to make swirls.
  7. Place in the refrigerator to set up for at least 2 hours or set overnight at room temperature before cutting into pieces.
  8. May be stored at room temperature for up to 5 days in a closed container. Enjoy!

Eggnog Cinnamon Rolls

Sweet swirls of cinnamon, brown sugar and nutmeg all rolled up inside puffy Eggnog Cinnamon Rolls.  The Eggnog Cream Cheese Icing caps off and sinks right into the middles of each of these warm swirling sensations!

Are you ready for a sweet holiday treat this eggnog season?  

The creamy drinkable stuff just isn’t for drinking.  In my little world, it means eggnog is for baking!

These special cinnamon rolls just got a little hyped up over here– eggnog style.

Special in the sense that there’s sweet, creamy eggnog twirling around in every crevice of these tender, moist cinnamon rolls!

The delectable cream cheese frosting even has a splash of eggnog mixed within.  It’s truly a frosting you can sit and eat straight out of the bowl.  Not that I’ve ever done that or anything… 

I’m basically obsessed in love with making (and eating) cinnamon rolls on any given day.  But these Eggnog Cinnamon Rolls are sinfully delicious!  Not only is there eggnog in the actual dough, but there is also eggnog in the creamy frosting.  The creamy eggnog really gives these cinnamon rolls a moist texture and exquisite taste without being overbearingly eggnoggy.  At least that’s what the teenager said– which, might I add, is one of my official taste testers.  Just for the record, he devours (more than a few of) these before they can even cool down.  

I’m going to take you through the simple steps in making these amazing cinnamon rolls from scratch.  Have all of your ingredients out and ready.  Huge note:  your eggnog and eggs need to be at room temperature.  But if you are impatient like me, set your cold eggs in a bowl of hot water.  The cold eggs will cool the water down and the hot water will warm the eggs right up.  Works like a charm.  The other thing, the cold eggnog.  Pour 1/2 cup cold eggnog in a liquid measuring cup.  Set the measuring cup into a bowl of hot water.  This is my method of rushing things along.

You can make and have these (big!) babies baked all within an hour!  First things first, there’s absolutely no need to be intimidated by the Y word = yeast.  It’ll be your best friend.  I promise.

Eggnog Cinnamon Rolls with SimplyGloria.com 1Place the (active dry) yeast, sugar, and water together.  Give it a little stir.  Set off to the side for 10 minutes.  I like to set mine inside of the microwave (no power), because it is a draft free zone.  Just let the yeast do it’s magic.  Once your yeast is proofed, as shown in the image above, stir in the honey.  It will deflate a little.  No worries.

If you have a stand mixer, attach the dough hook or use a large wooden spoon to mix by hand.  Put only 3 cups out of the 3 3/4 to 4 cups of bread flour in a large mixing bowl.  Then add the proofed yeast-honey mixture with the room temperature eggs and room temperature eggnog.  Along with rum extract.  

I almost always use the real rum stuff– my much bigger bottle of baking Spiced Rum.  You know, just like the eggnog, love it in baked goods!  But, Miss Beatrice behind the tiny pharmacy counter with the ever more tiny alcoholic beverage area (our town’s liquor store) in the near corner, has that look of very high doubt when I tell her it’s for baking… at 9:00 in the morning. Because I should had some how known Utahns can’t start drinking until 10 a.m.!  Silly me.

Mix the mixture on low and slowly add the last 3/4 cup to 1 cup of bread flour.  You want to make sure it’s not sticking to the sides of the bowl.  This takes about 4-5 minutes to achieve– in a stand mixer.  Don’t over mix.

Take the ball of dough out of the bowl and place on a floured surface.  Place the empty bowl on top to cover the dough for 10 minutes.  By doing this, it relaxes the gluten in the flour  It also helps the dough to cooperate when rolling out.  AND when baked, the texture is super tender… almost literally melts in your mouth.

Roll out the dough (on the lightly floured surface) to a rounded rectangle size in the neighborhood of 15 inches by 12 inches.  And, about 1/2 thick.  Be sure to not over work the dough.  What makes this so fun, is that it doesn’t need to be perfect.

Spread butter flavored shortening on the laid out dough.  (I’ve tried real butter and to my surprise it doesn’t come out with the same great results.)  Pile on the brown sugar, sprinkle the cinnamon and nutmeg to all the edges.  Except the one edge you are going to have the roll sealed. 

Eggnog Cinnamon Rolls with SimplyGloria.com 6Grab a long piece of thread and slice it up underneath the roll.  Crisscross the thread while going down onto the dough.  It will cut with out smashing the dough.  Tip:  Only use a knife to mark the top of the dough (to get even cut pieces) before using the thread.  Makes about 12 cut rolls.

Gently lay the rolled pieces of dough onto a large greased baking sheet. Place each one about 1/2 inch apart to allow room to rise.  That includes from the edges from the pan.

Set these beauties, uncovered into a draft-free zone… aka, the turned off microwave, for 10 minutes.  Tip:  Before placing the dough in the (off) microwave, boil water in a microwave safe bowl and leave in there until it’s time to place in the dough.  It will make the draft-free zone like a warm cozy sauna for the rolls.

Now that the cinnamon rolls have had some time to rest in the draft-free zone, they are looking ready to bake!

They will puff up even more the moment they enter the preheated oven.

While the aroma of fresh baked sweet rolls are baking in the oven for 20 minutes, whip up the Eggnog Cream Cheese Icing!

The moment the rolls come out of the hot oven, smother them with the icing so it gets into every crevice!

Ingredients
  1. 1 tablespoon active dry yeast (I've always trusted Fleischmann's.)
  2. 1 tablespoon granulated sugar
  3. 1 cup really warm water, about 170 degrees
  4. 2 tablespoons honey
  5. 2 eggs at room temperature, beaten
  6. 1/2 cup creamy eggnog at room temperature
  7. 1 tablespoon rum extract
  8. 3 3/4 to 4 cups bread flour
  9. 3/4 cup light brown sugar
  10. 3 tablespoons cinnamon
  11. 1 tablespoon nutmeg
  12. 3-4 tablespoons butter flavored shortening
Icing
  1. 4 1/2 cups powdered sugar
  2. 8 ounce cream cheese (room temperature or cold)
  3. 2-3 tablespoons creamy eggnog
  4. 2 teaspoon rum extract
  5. 2 teaspoon cinnamon
  6. 1 teaspoon nutmeg
Instructions
  1. Combine yeast, granulated sugar, and warm water in a small mixing bowl. Set aside in a draft-free zone for 10 minutes. Once the yeast mixture has proofed, stir in the honey.
  2. Add the proofed yeast-honey mixture, eggnog, beaten eggs, and rum extract into a large mixing bowl with 3 cups of bread flour. Mix by hand or use a dough hook with a standing mixer on low speed. Slowly sprinkle in the rest of the flour while it is mixing. Keep mixing until the dough has pulled away from the sides of the bowl. Add additional flour one tablespoon at a time, if needed. Do not over mix or knead.
  3. Take dough out of the bowl and set onto a lightly floured surface. Allow the dough to rest for 10 minutes, covered. (This helps relax the gluten in the dough... therefor, making a tender texture.)
  4. Roll out the dough (on the lightly floured surface) to a rounded-rectangle size about 15 inches by 12 inches. And, about 1/2 thick. Be sure to not over work the dough.
  5. Spread the butter flavored shortening across the dough. Spread around the brown sugar and sprinkle the cinnamon and nutmeg to all the edges. Except the one edge you are going to have the roll sealed.
  6. To roll into a log form, start with one of the long sides, tuck and roll the dough until you come to the very end. Make sure to have the last part of the flap onto the bottom to hold it together. Grab a long piece of thread and slide it up underneath the roll. Crisscross the thread while going down onto the dough.
  7. Gently lay the rolled pieces of dough onto a large greased baking sheet. Place each one about 1/2 inch apart to allow room to rise. That includes from the edges from the pan.
  8. Set rolls off to a draft-free zone (uncovered) to rest and puff (rise) for 10 minutes.
  9. Bake for 20 minutes on the bottom rack in your preheated 350 degrees oven.
Icing
  1. Beat the cream cheese for 30 seconds. Then add powdered sugar 1 cup at a time, alternating with creamy eggnog. Add the rum extract and whip until you have the desired consistency. Sprinkle in the cinnamon and nutmeg.
  2. Spread on the icing on the hot baked cinnamon rolls as soon as they come out of the oven. I like to do this, because the icing starts to melt in between all of the swirling crevices.
  3. Enjoy!
Notes
  1. These are just as perfect when you make them the night before. Cover the unbaked pan of cinnamon rolls with plastic wrap and set into the refrigerator over night. Unwrap and allow to get to room temperature. Place in oven and bake.
  2. Will stay fresh for up to 3 days in a stored container. But best the day of baking.
  3. Makes one large dozen. For smaller rolls, this recipes will make 18 rolls.

You are going to LOVE these soft chewy cookies!

I know, only because these go flying off the hot baking sheet faster than they are set off to the side to cool.

Even too fast to tuck them into my favorite cookie jar for that one o’clock in the morning sweet attack kitchen raid.  (No, not me… talking about the hubster!)

But as it goes, how could you really resist cookies like these?

Especially when there’s melted dark chocolate mixed throughout the cookie dough, dark chocolate baking cocoa sifted in with the flour, and dark chocolate baking chips just hanging with cranberries!

You can just call that AH-MAZING!

OR a triple dark chocolate embrace.

The tart cranberries mildly making their way throughout the waves of dark chocolate.

Although, I usually like to let cookie dough rest in the refrigerator for a little bit, this recipe you don’t really need to.  

But you may store the cookie dough in the refrigerator for up to 3 days and bake at a more convenient time… like when it’s 10 p.m. and you just remembered the milkman is coming at the crack of dawn and there’s no sweet treat left out.  A panic stricken moment may occur.  Trust me.

Place scoops of cookie dough straight into the bowl of powdered sugar .  This is the fun messy part.  Especially when you have a little helper that decides to see how far powdered sugar can fly!

Place the mounds of covered chocolate goodness onto a covered baking sheet.  I’m personally addicted to using parchment paper.  Use a silicone baking mat or whatever your heart desires.  It helps your cookies bake more evenly… like a little cloud resting under your cookies while they’re baking in the heat.

Gently press the tops down of the dough.  But don’t be getting too carried away and smash them… just gently with your palm.

Bake and devour!

Ingredients
  1. 1/2 cup butter, room temperature
  2. 1 cup light brown sugar
  3. 1 large egg, plus 1 egg yolk
  4. 1/2 cup vanilla Greek yogurt
  5. 1 teaspoon vanilla extract
  6. 1/2 cup dark chocolate chips, melted
  7. 1/3 cup dark chocolate baking cocoa
  8. 1 3/4 cup all purpose flour
  9. 2 teaspoons cornstarch
  10. 1/2 teaspoon baking soda
  11. pinch of salt, optional
  12. 1 cup dark chocolate chips
  13. 1 cup fresh cranberries
  14. 1 cup powdered sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. Sift all of the dry ingredients in a medium bowl– baking cocoa, flour, cornstarch, and baking soda, set aside.
  3. Melt 1/2 cup of chocolate chips in a microwave safe bowl, set aside.
  4. In a large mixing bowl, cream together the softened butter and brown sugar. Scrap down the sides. Mix in the large egg and the egg yolk. Combine the Greek yogurt, vanilla extract and melted chocolate.
  5. Slowly add the sifted dry ingredients until all mixed in. Stir in the 1 cup of chocolate chips and cranberries.
  6. Place powdered sugar in a separate bowl. Roll scoops of cookie dough in the bowl of powdered sugar until all covered.
  7. Place the powdered sugar covered cookie dough onto a covered baking sheet about 1 1/2 inches apart. (I use parchment paper.) Lightly press the tops of the cookie dough with your palm.
  8. Bake cookies for 8-10 minutes. Allow them to rest on the hot baking sheet for about 3-5 minutes before transferring them onto a cooling rack to cool. Makes 2 dozen medium cookies.
Notes
  1. You may use your favorite kind of chocolate in this recipe. When the cranberries are out of season, replace it with even more chocolate chips or another fruit. (Raspberries are delicious in these, too!)

Let’s start off with these THREE cast iron skillets… with the slip-on Kitchen Grips!  Think of all the skillet meals and desserts you can make!  Just to name a few of my favorite recipes that are a must-make:  {Easy 30 Minute} Cinnamon Roll Skillet Cake from my friend Chelsea’s Messy Apron & this Skillet Pizza Pasta Bake from my other friend This Gal Cooks!

You may not know this about me, but I used to be a professional hair designer back in the day.  I still stay up with the latest… and this my friends, is my most favorite hair product.  It comes with shampoo & conditioner… AND also comes with a one-ounce bottle of the Shatterproof Shine oil.  You will LOVE it!

I’ve recently become a coffee drinker.  It was one of my life time achievements… that, and eating salads.  Still working on that one.  But, now I have to admit I’m a coffee snob.  I’ve tried many and this one is my all time favorite!  Besides, caramel overrides anything in my book!

Okay, we all love our house to smell good, right?  This right here is a Wallflower with my most favorite scent, the Black Tie.  It’s a very classy smell!  I have one in every single room in my home.  You would too if you had a house full of guys.  Wink.

I truly think I’m a slow cooker hoarder!  They come in all sorts of sizes, too.  How can someone not be addicted? I love all of my crock pots.  But, this 3-quart crock pot with a slide out pot is perfect!  It’d even be perfect to make this delicious slow cooker recipe:  Slow Cooker Barbecue Beef Sandwiches from my friend Cooking With Curls.  There’s always a reason to break out the crock pot!

We have a big storm nestled up here in the mountain ranges– all weekend long.  Great news for the ski and snowboard people!  I’m not one of them.  I ride the ski lifts… up, then back down.  That’s how I do it.  Oh, and with a hot beverage in hand.  You really couldn’t enjoy that while speeding down a crazy sloped hill side!
