Fudge Brownie Cheesecake Bites
These are the perfect little treats to devour... one by one! Store in the refrigerator. Makes about 2 dozen Cheesecake Bites to share!
  • 1 (5 inch) Fudge Brownie Cheesecake (found in the freezer section of your grocery.)
  • 1 cup of chocolate pieces, melted (I used Hershey's Baking Melts)
  1. Use a small cookie scoop to scoop into the cheesecake, with the crust.
  2. Place scoops onto parchment or wax paper.
  3. Place into freezer for 20 to 30 minutes.
  4. Melt chocolate pieces over a double boil. (Chocolate in a heat safe bowl setting over a pot of hot water. Do not let the water touch the bowl.)
  5. Take the scoops of cheesecake out of freezer and form into rolled balls.
  6. Dip cheesecake into the melted chocolate and shake off excess of chocolate.
  7. Repeat process with the rest.
  8. Allow the chocolate to set up at room temperature before setting into the refrigerator. Otherwise, the chocolate will change when cooled too fast.
