Grilled Chicken Caesar Salad
- 2 large boneless chicken breasts, cut into bite-size pieces
- 1 bunch of romaine lettuce
- 1/2 cup grated Parmesan cheese
- 1/2 cup your favorite Caesar dressing, divided
- 4 short skewer sticks
- Cut the chicken into bite-size pieces.
- Pour 2 tablespoons of dressing over chicken in a zipped baggie. Refrigerate 30 minutes to marinate.
- Heat grill to medium heat. Thread chicken onto 4 skewers. Grill for about 7 minutes or until done, turning occasionally.
- Arrange lettuce on a platter; drizzle with the remaining dressing. Top with chicken skewers and Parmesan.
