Caprese Grilled Cheese
Makes 2 sandwiches.
  • 4 thick slices french bread
  • 3-4 small tomatoes, sliced (I used Campari tomatoes)
  • 6 oz. mozzarella, sliced (or shredded, whichever you prefer)
  • 8-10 fresh large basil leaves
  • 2-3 tablespoons butter
  • 1/4 cup grated Parmesan
  1. Heat a large skillet to medium heat.
  2. Spread butter on one side on all 4 slices of bread. Sprinkle Parmesan on the butter.
  3. Put all 4 pieces, butter/Parmesan side down in to the heated skillet. Lay mozzarella on all pieces of bread. Cover with a lid to keep the heat in and melt the cheese.
  4. Once the cheese is melted, lay the sliced tomatoes and fresh basil onto the cheese.
  5. Assemble the sandwiches by putting the tops on.
  6. Enjoy!
