Then the ever so amazing cinnamon chips give it all the finishing touches of a Fall cookie.

Super soft Pumpkin Cinnamon Oatmeal Cookies have a lush pumpkin spice blend with scrumptious cinnamon chips in every single bite!

Ingredients
  1. 2 ounces softened cream cheese
  2. 8 tablespoons unsalted butter, room temperature
  3. 3/4 cup light brown sugar
  4. 1 large egg, plus 1 egg yolk
  5. 1/2 cup pumpkin puree
  6. 2 teaspoons vanilla extract
  7. 1/2 teaspoon pumpkin pie spice
  8. 2 1/4 cups old-fashioned oats
  9. 3/4 cup all purpose flour
  10. 1 teaspoon baking soda
  11. 1 (10 ounce) bag cinnamon chips
Instructions
  1. Cream together 2 ounces of cream cheese and butter. Add brown sugar and mix. Mix in egg, egg yolk, pumpkin puree, vanilla, and pumpkin pie spice. Add oats and combine. Mix in flour and baking soda. Stir in the cinnamon chips.
  2. Set in the refrigerator to rest for 30 minutes.
  3. Use a large (or medium) cookie scoop and set 2 inches apart onto a covered (parchment paper or Silpat) baking sheet. Lightly press down the center of each ball of cookie dough.
  4. Bake in a preheated 350 degrees oven for 11-13 minutes.
  5. Allow cookies to cool on the baking sheet for 5 minutes before transporting them to cool completely on baking racks or a clean surface.
Notes
  1. Makes 24 large cookies and 36 medium cookies. Store in an air tight container for up to 4 days.

Pulled Pork Green Chili

Pulled Pork Green Chili has fresh roasted chiles and tomatillos, stewed with tender pulled pork.  All the southwestern-style taste and so much more!

 It’s been getting quite nippy out lately.  I’m thinking my shorts and flip flops are now gone for the next 8 months.  (I’m weeping.)  The leaves are already in the midst of changing to the vibrant and bright colors.  Frost is glistening in the morning sunlight.  And, it’s the perfect time of year to turn up the heat with a classic bowl of chili.

I’m talking about a green chili.

A green chili with roasted mild green chiles (with an “e”), garlic, tomatillos (the “ll’s” are silent, people.), and jalapenos.

You can make this green chili with as much “heat” as you want.   

But since I have to gear down the heat a bit over here, I went mild on this recipe.  My guys can’t handle the heat when I go spicy… what the what?!  Oh, the sacrifices I make for them.  (wink)

Pulled Pork Green Chili with roasted vegetables!

 Pulled Pork Green Chili is an easy chili to prepare.  Roasting the chiles, tomatillos, garlic, onions, and jalapenos intensifies the flavors so much.  But, if you’re not able to go with the fresh ingredients, then you may also use the canned chiles, tomatillos, or jalapenos.  

This is also a fast chili to make when you already have leftover pulled pork on hand.  Bonus!

If by chance you don’t have leftover pulled pork, do this:  rub salt (I use kosher salt) and pepper with olive oil on (a 1-2 pounder) boneless pork butt.  Sear on both sides in a preheated frying pan, until golden brown.  Put in a crock pot (slow cooker) with 2 cups water (or chicken broth) for 4-6 hours.  If using a boneless pork loin, the cooking time will be less by half.  This also depends on how high or low you cook the meat.  Always remember, low and slow for much more tender meat. 

If you also have time to cook dried pinto beans instead of using canned beans, do this (very simple!):  rinse 1 1/2 cups dried pinto beans.  Pick out any bad beans that don’t belong to the group.  Place in a medium to large sized pot with 8 cups of water.  I love to use chicken broth, instead.  Cook it on the stove top on low, covered.  Stir occasionally.  OR place in a crock pot.  Drain the liquid and place in the chili.  Super delicious!

I can’t really decide who is really the star of this chili… the pulled pork, pinto beans, jalapenos, chiles, garlic, cilantro, or the tomatillos.  I love them all! Hope you enjoy this green chili as much as my friends and family do!

Ingredients
  1. 2 15-ounce cans pinto beans, drained
  2. 1 pound leftover pulled pork meat (shredded chicken is great, too!)
  3. 2 tablespoons olive oil
  4. 2 pounds tomatillos, papery husks removed and rinse
  5. 4 large Anaheim chiles
  6. 1 large jalapeno (add more for heat)
  7. 1 large yellow onion, peeled and cut into half
  8. 1 bulb garlic, separated but leave paper on each clove to roast. (Then the paper slips off when done roasting.)
  9. 1 bushel cilantro (save some for garnish!)
  10. 2 tablespoons all purpose flour
  11. 3 cups chicken broth (or stock)
  12. 1 tablespoon ground cumin
  13. 2 teaspoons dried oregano
  14. salt and pepper, to taste
Instructions
  1. On a large baking sheet, put husked and rinsed tomatillos, chiles, jalapeno, peeled onion, and the unpeeled garlic. Sprinkle olive oil on the tops of vegetables and set in the oven under the BROIL. (If your oven has a Broil temperature gauge, set the rack at the top at 375 degrees. If you do not have a gauge, set on the bottom rack, as to not directly burn them. OR char them on your stove top.) Rotate the roasting vegetables until charred all around. Set aside to cool and peel the jalapeno and chiles. (You may also set them in a closed plastic bag to steam and loosen the outer skins.) When jalapeno and chiles cool, slice in half and scoop out seeds with a spoon. Remove the papers from the roasted garlic, too. Leave the tomatillos whole.
  2. Chop tomatillos, jalapeno, chiles, garlic, and onion (or lightly "chop" in food processor).
  3. Put all the chopped vegetables in a large sauce pan on medium heat. Stir in 2 tablespoons of flour. Cook for about 2 minutes.
  4. Pour in 3 cups chicken broth and drained beans. Add fresh cilantro, ground cumin, oregano, and leftover pulled pork. Stir until combined and simmer uncovered for 20-30 minutes on low heat.
  5. Garnish with cilantro and cheese. Enjoy!
Notes
  1. Makes 3 quarts of chili. Store in the refrigerator for up to 3-4 days.

Are you a chocolate lover?

Does chocolate really make you smile?

Chocolate makes me smile … when it’s tucked in and all around a sweet, moist cake.  

But, the true and official chocolate lover in our home, is the 7 year old, Easton.

I really don’t know how or where he acquired such a taste.  The rest of the fam aren’t very big fans of chocolate.  Maybe it was from when I was preggers with East, I’d have spoonfuls of chocolate cake batter AND brownie batter… I know what you’re thinking.  Yes, with raw eggs.

Does there really need to be a special occasion when breaking out a cake?

Cake isn’t just for birthday celebrations.  At least, not up in here.

We do fried cheesecake for birthdays instead.  

So, when the boys come home from school to see a tall dark chocolate cake just hanging in the kitchen, they immediately ask for a (huge) slice.  

Because you know when eating a slice of chocolate cake is so much helpful when doing homework.

Homework + chocolate cake = happy time!

You are going to love how simple it is to make this  Dark Chocolate Cake with Whipped Ganache Frosting

I created this cake recipe after seeing one of my main ingredients staring back at me in the refrigerator… vanilla bean Greek yogurt.  

Yeah, my baking mind was churning.  

Then, I instantly thought about the usual request for after school chocolate cake!  

I’d have to say the dark chocolate plays a huge roll in the part.  There is seriously so much dark chocolate in this cake, your toes will curl!  But, the vanilla bean Greek yogurt plays a bigger part.  The Greek yogurt makes it super moist!  Which is important, right?

It also helps that there is melted dark chocolate swimming around in there, too!

Oh, and not to mention MORE dark chocolate with the whipped ganache frosting.

  1. 1/2 cup granulated sugar
  2. 1/4 cup light brown sugar
  3. 3/4 cup all purpose flour
  4. 1/2 cup baking cocoa (dark chocolate or semi-sweet)
  5. 1/2 teaspoon baking soda
  6. 1/2 teaspoon baking powder
  7. pinch of salt
  8. 1 cup dark chocolate chips, melted
  9. 1 cup vanilla Greek yogurt
  10. 2 eggs
  11. 1/2 cup room temperature coffee or water
  12. 1 teaspoon vanilla
whipped ganache
  1. 2 cups dark chocolate chips
  2. 1 cup heavy whipping cream
  3. 2 tablespoons butter (unsalted and real)
  4. 1 teaspoon vanilla
for the cake
  1. Melt 1 cup of chocolate chips over a double boil (or microwave), set aside.
  2. In a large mixing bowl, whisk together sugars, flour, baking cocoa, baking soda, baking powder and salt.
  3. Add melted chocolate, yogurt, eggs, coffee, and vanilla. Stir until combined.
  4. Line the inside of each baking pan with a cut piece of parchment paper. (You may also line with non-stick spray or rub butter all around the inside and dusted flour.)
  5. Bake in a preheated 350 degrees oven for 20-23 minutes. (25-28 minutes for a single sheet cake.) Test with a toothpick in the middle of the cake. It's okay if it comes out with a little bit of crumb on it. Take cake(s) out to cool in pan(s) for 5 minutes, then transfer to a cooling rack.

  1. Stir the chocolate chips, heavy cream, butter, and vanilla in a heat safe bowl over steamy boiling water (double boil). When the chocolate mixture is smooth, take off of hot water and set aside to cool. Place an empty medium mixing bowl in the freezer while the chocolate is cooling. Once the mixture is cooled down, put in the mixing bowl and mix on high speed with your electric mixer. It will start to become a creamy consistency. Once you see SOFT peaks forming, you are done mixing. (Do not over mix. It will be too stiff to frost.)
  2. Divide the frosting to frost the layers of cake. Store in refrigerator. Serve at room temperature.

  1. This cake makes one triple layer 5 inch round cake OR double layer 9 inch round cake OR one single sheet cake in a 9x13 inch pan.

Since this is the non-official time of year to break out the pumpkin action, thought I’d share with you my latest (and greatest) creation thus far. 

Once you make these Chocolate Chunk Pumpkin Granola Bars, I promise you will be going back for more… and more.  

Trust me.  I know.  I pretty much devoured my test batches before I could give my taste testers any.   

What makes these so good is a few things… they are no-bake… and guilt-free delicious!

Pumpkin is among a few of my necessary items in my refrigerator this time of year.  

There’s always a rare shortage of butter, of course.  

Plenty of milk and eggs are always on hand.  Thank you, Mr. Milkman! 

Our temperatures are already barreling down to freezing at night.  Summer is over (pure sadness) and Fall is now upon us.

It’s time to open the trusty cans of pumpkin and smell the sweet Fall aroma throughout the house!

If you’ve been hanging with me for awhile, you know I love to cook from scratch.  So, when Easton asked if we can run to the store to satisfy this all-of-a-sudden-craving-for-granola-bars, I mentioned to him that we can stay home and make them instead. (Great advantages of making a lot of things from scratch, is that I usually already have the ingredients on hand without having to make a special trip to the store.)  And, while I had some already opened pumpkin in the refrigerator, that begun the makings of these homemade Chocolate Chunk Pumpkin Granola Bars.

Homemade Chocolate Chunk Pumpkin Granola Bars are swirling with cinnamon, brown sugar, and coconut. Pumpkin and chocolate is in every single bite!

Ingredients
  1. 1/3 cup honey
  2. 1/3 cup pumpkin puree
  3. 1/2 cup plus 2 tablespoons light brown sugar
  4. 1 tablespoon chai seeds
  5. 1 teaspoon vanilla
  6. 1 1/2 cups rolled oats
  7. 1 cup crispy rice cereal
  8. 1/4 cup ground flax seed
  9. 1/3 cup unsweetened coconut flakes
  10. 1/2 cup mini chocolate chips
  11. 1/4 cup semi-sweet or dark chocolate chunks
Instructions
  1. In a medium size sauce pan, combine the honey, pumpkin puree, light brown sugar, chai seeds, and vanilla on medium high heat. Bring to a soft boil for 3-5 minutes. Set off to the side for 15 minutes to cool down.
  2. In a separate mixing bowl, combine the rolled oats, rice cereal, flax seed, and coconut. Pour the pumpkin mixture over the rolled oats mixture and stir until all is coated. Stir in mini chocolate chips.
  3. Line a 8 inch by 8 inch baking dish with aluminum foil or parchment paper. Put the coated pumpkin oats mixture into the baking dish. Pat with the back of a spoon to impact it evenly across. Add large chunks of chocolate on top. Cover and chill in the refrigerator for 30-60 minutes. Lift foil or paper out of the baking dish to cut into 8 rectangle pieces. Store at room temperature, covered. Stays good for up to 3 days.

Seafood and pasta has got to be one of my favorite kinds of foods to indulge in.

With pasta, there is endless shapes and textures to choose from.  So much possibilities! 

Fresh seafood, on the other hand, is a tad bit harder to come by here in Utah.

Living in the middle of a state that is nowhere near the salty ocean… and living near a salty lake definitely does not count!  But, finding a store that sells fresh seafood is a gem.  Even if it’s clear around the mountain side.

Because fresh clams are so hard to come by in these neck of woods (literally),  I also use the good ole’ fashioned way and open up cans of clams.   Those are always available and taste wonderfully!

You may also use whatever pasta fits your fancy.  

Fusilli Caserecci with Peppered Bacon Clam Sauce is a hearty dish to make any night of the week.  

This happens to be one of my go-to recipes when I’ve got extra bacon from the morning.  If you’re wondering how in the world could there be leftover bacon?  I have to hide it.  Simple as that.  And, if I fry it up ahead of time for this dish, I still hide the bacon.  Or there would be no bacon for the dish!

Ingredients
  1. 1/2 cup unsalted butter
  2. 1/3 cup all purpose flour
  3. 2 (6.5 oz.) cans of clams in clam juice. (save juice)
  4. juice from both cans of juice. (which comes to about 1 cup)
  5. 1 1/4 cup chicken broth
  6. 1/4 cup sherry (or can substitute for extra chicken broth or water)
  7. 1 1/3 half and half cream
  8. salt and pepper, to taste
  9. onion powder and garlic powder, to taste
  10. 1 pound bacon, fried and cut into pieces.
  11. 1 medium red onion, diced
  12. 3 garlic cloves, crushed
  13. 1 1/2 pounds fresh clams, scrubbed and rinsed with cold water.
  14. 10 ounces pasta (I used Fusilli Caserecci pasta.)
  15. 1/2 cup fresh grated Parmesan
  16. fresh parsley for garnish
Instructions
  1. Bring water to boil and cook pasta for 2 minutes less than what the package directs.
  2. In a large skillet, saute the onion and garlic in the 1/2 butter, until almost translucent on medium to low heat.
  3. Whisk in flour and cook for about 5 minutes on low heat. (This cooks out the taste of the flour.)
  4. Slowly whisk in the clam juice from cans, chicken broth, sherry, and then the cream. Turn up to medium heat. Continue to whisk until it starts to thicken.
  5. Once you see the sauce almost thicken, add the washed clams to the sauce and put a lid on the skillet. This will steam the clams to open. It may take about 10-15 minutes. (This is happening while your pasta is cooking.)
  6. Once the clams have all opened, add the drained canned clams for extra clam action and crispy cooked bacon.
  7. Serve immediately over the drained pasta and top with fresh Parmesan and chopped parsley.
  8. Enjoy!

How has your summer been?

Summer here in Utah is not long enough.  

So to help solve the problem and make it last as long as possible… I get the boys out of the house every day the sun is out.  That way we can capture every single moment of our not-so-long summer, before winter arrives.

Today, is no different.  We’re off to another adventurous day… at the local amusement/water park.  

All.  Day.  Long.

When we have days like this, it’s in high demand that hungry bellies need to be fed the moment we walk in the door.

Whether the truck is still needing to be unpacked of goggles, wet swim towels and who knows what else… the boys can’t run fast enough into the house when they smell these French Dip Shredded Beef Sliders from outside!

Especially with this busy and hot time of year, we want a hot and hearty meal without spending all evening in the kitchen.  Am I right?

These French Dip Shredded Beef Sliders are the perfect solution!  

This is one of those super easy recipes that you throw all of the ingredients together in a slow cooker and let it do it’s thing– while you’re out playing all day.

One bite of these sliders and you’ll be in love with the tender shredded beef.  Slow cooked with onions and golden peperoncinis.  Shred the beef in with all the juices and pile onto a soft slider roll.  

There you go, fast and easy… but slow cooked delicious!

Ingredients
  1. 1 boneless beef chuck roast (3 pounds)
  2. salt (I use Kosher salt) and pepper
  3. 1 1/2 cups beef broth
  4. 1 cup golden peperoncini peppers (with juices)
  5. 3 tablespoons Worcestershire sauce
  6. 1 medium red (or purple, whichever you like to call it) onion, sliced
  7. your favorite cheese, optional (I love to spice it up with 3 Pepper Colby Jack cheese)
  8. slider buns
Instructions
  1. Cover uncooked beef with salt and pepper on both sides. Sear both sides in a medium hot heated frying pan. Place in a slow cooker with beef broth, peperoncinis, Worcestershire sauce, and sliced onions.
  2. Cook for 4-6 hours on high or 6-8 hours on low.
  3. Trim and discard any excess fat. Shred beef in with the juices, onions, and peperoncinis. Place in between warm slider buns and serve.
Notes
  1. Depending on how much fat you trim off your beef roast, and how high you pile your meat on the slider buns, this recipe makes about 10 sliders. Enjoy!
