I think I have a bit of an obsession with pasta.
I’m in love with the taste of pasta… the texture of different pasta… but mainly the shape of pasta.
I could spend a whole lotta time in the pasta isle. Especially in the expensive specialty pasta section. Dreaming of all the different sauces that can be made to swim around the specific sauce bound pastas.
But let’s get to the pasta one pot meal I made for you! Creamy Chicken Pasta Skillet is seriously a dish you are going to want to make on Pasta Night! Don’t have a specific pasta night on your weekly menu?? Now’s the time to designate one!

How it works is, we each choose 3 (or more) ingredients from the given month’s ingredients list and create a recipe. Colleen with The Smart Cookie Cook is our host this month. She came up with this amazing list of ingredients:
White Chocolate
Peppermint Bark
Muenster cheese
Eggnog
Canned biscuits
Nutmeg
Browned butter
Cherry tomatoes
Spinach
Roasted Garlic
Vanilla ice cream
Cream cheese
Are you curious how I chose my three ingredients?
Not only am I obsessed with pasta, but with cheese. And, Muenster cheese happens to be a staple in my kitchen. I know it’s kind of hard to believe there’s green in one of my recipes. But, I love how fresh spinach can add some depth to a dish. And of course, cream cheese. Another staple I cannot be without.
You are going to love how easy this one pot meal is… on Pasta Night, or Chicken Night… or Skillet Night!
In a heavy skillet, sauté chicken and sun-dried tomatoes for about 5 minutes.
Pour chicken broth straight onto the sautéd chicken and sun-dried tomatoes. All the flavor on the bottom of the seared pan will go all through the dish! Add your favorite dry pasta. (I used Garganelli pasta.) Stir and cover. Allow it to simmer for 15 minutes, covered.
Lift the lid and add the chopped fresh spinach and cream cheese. Put the lid back on for a few more minutes to melt the cream cheese.
Turn off the heat and stir the amazing~ness all together.
Now it’s time to add the Muenster cheese (or your favorite kind of cheese). Oh, so cheesy~licious!


- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 pound boneless chicken breasts, cut into 1 inch pieces.
- 1/2 teaspoon oregano
- 1/4 cup sun-dried tomatoes, chopped
- 2 1/2 cups chicken broth
- 2 1/2 cups dried pasta
- 2 cups fresh spinach, chopped
- 4 ounces cream cheese
- 1/4 pound Muenster cheese, or your favorite kind.
- Preheat skillet on medium heat with olive oil and butter. Place chicken pieces and sun-dried tomatoes. Sprinkle on the oregano and sauté for 5 minutes.
- Pour in chicken broth and stir in dried pasta. With the heat still on medium heat, cover with lid for 15 minutes.
- Lift the lid and add chopped fresh spinach and pieces of cream cheese. Stir and put the lid back on for a few more minutes to melt the cream cheese.
- Turn off heat and add cheese. Cover with lid to melt cheese. Serve immediately.
- Makes 4-6 servings. May be easily doubled for a more hungry crowd!

I do love pasta, Gloria, and this one looks SO creamy! I’ve not had enough exposure to Muenster cheese, but just revisited it over the holidays and love it! It’s so mild and delicious. Combining it with cream cheese for the sauce was a brilliant idea! Pinned. 🙂

Teresa, it really varies from white American cheese and a jack cheese. (Depends on the brand.) It melts really nicely… super creamy… and delicious!
Muenster is a must! I’ve never had it in a pasta, always just on sandwiches, but the combination of it, spinach, and chicken sounds heavenly. This is the kind of comfort food we all want to dig into on a snowy day!
