How does this sound? A seasoned baked potato skin stuffed with cream cheese and chicken…then smothered with buffalo sauce! It just says PARTY all over it, am I right?!
Buffalo Chicken Potato Skins are the must have party food to make and serve to all of your friends and family!
When I recently made these, Justin (my husband) would not step away from the stove! He was waiting very impatiently for them to come out of the oven. I’ll just say that these are a hit! Your guests (or even just YOU) will absolutely love these!
Here’s how simple they are to put together…
First, gather all of your ingredients: small to medium sized russet potatoes, one cooked chicken breast, cream cheese, butter, seasonings (to coat the potatoes), your favorite cheese (I used pepper jack), and some buffalo (wing) sauce.
Wash, scrub and dry all of the potatoes. (Trim any bad parts.) Puncture each potato a few times with a sharp knife. This allows the heat to cook them evenly. Rub the butter all over them…yes, time to get your hands dirty! Roll them into a seasoning mix of onion and garlic powder, Italian seasoning, pepper and KOSHER salt.
Set potatoes on a baking sheet about 2 inches apart from each other. Bake in a 400 degrees oven for 45 minutes.
When finished cooking, slice each potato in half. Scoop out the middles with a spoon. (I later used the middle part of the potatoes for another meal…mashed potatoes.)
1) Divide the cream cheese evenly between all the scooped out potatoes. 2) Add the cooked chicken. 3) Drizzle on the buffalo (wing) sauce. 4) Sprinkle on some cheese.
Place back into the heated oven for another 10 minutes.
Take out of oven and drizzle with even MORE buffalo sauce. Then serve with your favorite beverage! Because, these just aren’t your ordinary potato skins!

- 6 russet potatoes (small to medium size)
- 1-2 tablespoons butter
- 4 ounces cream cheese

- 1 cup of your favorite shredded cheese (I used pepper jack cheese)

- 1 tablespoon garlic powder

- Serve warm and enjoy!
