We are a grilled cheese kind of family. How about you?
Anything with cheese, and I’m all about it.
Depends what mood the boys are in, they’ll have soft or crunchy grilled cheese. (Yes, my kitchen is pretty much a 24 hour cafe!) When I recently offered to make a crunchy grilled cheese for my particular picky teen, it obviously wasn’t burnt crunchy enough…well, let’s just say someone went without a crunchy grilled cheese that day.
The Caprese Grilled Cheese Sandwich is a for sure winner! AND, it has the perfect crunch…with a Parmesan coated crust on sliced french bread. Melted mozzarella is swirling around the fresh tomatoes and basil.
All you need to do is heat up a large skillet on medium heat. Slice some tomatoes, french bread, and mozzarella. Layer with some fresh basil leaves.
Spread butter on one side on all 4 slices of the bread. Then sprinkle some Parmesan on top of the butter.
To melt the cheese evenly, I put it open-faced in the skillet. Cover with a lid to keep the heat in. After the cheese is melted, lay the tomatoes and basil on top of the melted cheese.
Assemble the sandwiches by putting the tops on. You’ll be having melted gooey cheese coming out of all sides…such a great thing!
Since my husband is a huge meat eater, he prefers sliced deli meat in between this sandwich. So if you like meat, go ahead and lay some in the middle. Otherwise, have it just as this. It is really delicious either way!

- 4 thick slices french bread
- 3-4 small tomatoes, sliced (I used Campari tomatoes)
- 6 oz. mozzarella, sliced (or shredded, whichever you prefer)
- 8-10 fresh large basil leaves
- 2-3 tablespoons butter
- ¼ cup grated Parmesan
- Heat a large skillet to medium heat.
- Spread butter on one side on all 4 slices of bread. Sprinkle Parmesan on the butter.
- Put all 4 pieces, butter/Parmesan side down in to the heated skillet. Lay mozzarella on all pieces of bread. Cover with a lid to keep the heat in and melt the cheese.
- Once the cheese is melted, lay the sliced tomatoes and fresh basil onto the cheese.
- Assemble the sandwiches by putting the tops on.
- Enjoy!
