Sweet and simple homemade crispy waffles ready to be devoured with your favorite toppings!
Our waffle iron is hardly ever in it’s home. And by home, I mean tucked away in a deep, dark space collecting dust.
Oh, no. I’m thinking of maybe letting it have permanently residency on the counter space near the coffee maker. Because the waffle iron is turned on A LOT.
I’m not talking about a weekend only waffle iron. Hot waffles are busted out in the mornings, we call weekdays. You know, the mornings when you’re eyeballing the clock, snapping fingers, and saying the word hurry about 39 times.
Yes, hot waffles happen at any given time here in my castle. As well as for the after school snack attack, the after dinner snack, and let’s not forget about the bedtime snack. Sometimes, this hot waffle action that happens, is an all day adventure!
Vanilla Greek Yogurt Waffles are one of those secret good-for-you waffles. The ingredients alone are in your kitchen. If not, you’re going to want to make sure you always have them on hand. Because you’ll be making waffles probably as much as me. And, for that reason… (drum roll, please)… I’m going to give away the same waffle maker that I use (daily) to one of you amazing readers! It’s my treat to you!

Are you ready for a made-from-scratch waffle that will blow your mind?
Pour buttermilk in a liquid measuring cup {or bowl} and add vanilla Greek yogurt, an egg, vanilla extract, and ground flax seed.
Whisk it all together and set aside.
In case you’re wondering why I put the (dry) ground flax seed in with the buttermilk mixture and not with the dry ingredients below, it’s a texture thing. Just by putting the flax seed in with the liquids first, it gives them a chance to soak and relax before going in with the dry flour. You won’t even know the seeds are in the waffles. It’s like they disappear and no one can call you out on trying to make them eat healthy!
Now it’s time to put together the dry ingredients in a medium mixing bowl.
I like to use half whole wheat flour and half all purpose flour. But if you’re feeling all whole wheat or all of the typical all purpose flour, go for it. This is just my way of sneaking in a little of the healthy without being called out by my guys. They think I just magically throw all of this together. Which I do… didn’t you know that? I make this so often, I can do it with my eyes closed.
Pour the wet ingredients into the dry ingredients. Stir gently and do not over mix. See the little lumps and bubbles in the image above? That’s how you want it to look. Let it do it’s thing. The interaction of the buttermilk and baking powder (and baking soda) will start rising up a little because of the chemical reaction between them.
While the batter is doing it’s thing, plug in and warm up the waffle iron.
Always spray the inside of your iron with whatever cooking spray you have. By doing this between every waffle, it makes for a happy iron. {My old Belgian waffle iron is over 20 years old!– just a little fact.}
Gently put a a few spoonfuls of batter in the center of the hot iron and shut gently. Ah, listen to the sizzle.
Be patient… a few moments later, you have a scrumptious waffle!


- 1 cup buttermilk
- 1/4 cup vanilla Greek yogurt
- 1 large egg
- 2 teaspoons vanilla
- 2 teaspoons ground flax seed
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- pinch salt (optional)
- Combine buttermilk, yogurt, egg, vanilla, and flax seed in a small bowl or liquid measuring cup. Set aside.
- In a medium mixing bowl, whisk together the flours, sugar, baking powder, baking soda, and salt.
- Pour in the buttermilk mixture into the dry ingredients. Gently stir. Do not over mix. Set aside and preheat waffle iron.
- Spray preheated waffle iron with non-stick cooking spray. Pour about 1/3 cup of batter onto the hot iron. Cook until golden brown. Serve hot.
- Makes about 6 waffles. Store leftover waffle batter in the refrigerator for up to 2 days. Wrap individual cooked waffles and may freeze.
