For all of you Lemon Lovers…
I have for you some LEMON cookies! White Chocolate Lemon Cookies, to be exact. They are drizzled with melted white chocolate and filled with more white chocolate.
One bite and you’ll be able to taste the fresh lemon juice swimming around in these cookies. I love the combination of lemon and sweet white chocolate together– don’t you?
Wait till you see how super simple these are to make…
Your base ingredient for this recipe is one box of a Lemon Cake Mix. Yes, a cake mix. Easy. And no one will ever tell it’s from a cake mix…it’s still a semi-homemade homemade, fresh baked cookie that no one will resist!
Combine the cake mix with (melted) butter, an egg, white chocolate chips, and fresh lemon juice– from one lemon.
Be sure to save some white chocolate chips to melt and drizzle over your cookies! Cover the baking sheet with parchment paper or a baking mat. Bake them in a preheated oven at 350 degrees for 8-10 minutes. Allow the cookies to finish baking on the baking sheet for another 5-7 minutes after you take them out of oven.
- 1 box Lemon Cake mix
- ½ cup butter, melted
- 1 egg, beaten
- Juice from one lemon
- 1 cup white chocolate chips, plus ½ cup for melted drizzle
- powdered sugar, for dusting the tops of cookies
- Preheat oven to 350 degees.
- Combine and stir the melted butter (make sure it is not hot) into the cake mix along with the beaten egg, and fresh lemon juice.
- Add the 1 cup white chocolate chips and stir.
- Scoop (I use a medium sized cookie scoop) the cookie dough onto a covered baking sheet (parchment paper or baking mat).
- Bake for 8-10 minutes. Do not over bake. (The white chips won’t be white anymore if you do.)
- Allow the cookies to finish baking on the baking sheet for another 5-7 minutes after you take them out of oven.
- To melt the white chocolate chips:
- Boil about 1 inch of water in a small sauce pan. Take off burner.
- Put ½ cup of white chocolate chips in a medium sized heat resistance bowl. Set the bowl on top of the small pot of already hot/boiling water. This will melt the white chocolate without burning it. (If you feel comfortable to use microwave, go ahead…it always changes the texture with me.)
- Drizzle the melted white chocolate onto the cookies.
- Dust with powdered sugar.
- Enjoy!

LOL!! At least you have someone eating your treats in your home…I bake so much (sometimes twice a day) that I think why the kids don’t overload on it. Besides, my boys are picky…they won’t eat a cookie that is over 24 hours old!
